So guys....I need your travel advice this time.
You're in Pattaya for a month, and want to split the trip with a long weekend away somewhere. Not Bangkok or Rayong. You're looking to spread your wings and quite like the idea of catching our creatures at the source somewhere.
You dont need the finer things in life, but require the following....
Ladyboys
Air Con
Bars Open beyond 2am
Farang food available
Minimal transportation between drinking venues.
You've a substantial network with Air Asia (and others) at your disposal, and quite like the idea of a new stamp in your passport that doesn't say BKK.....
Ideas so far:
Domestically:
Chang Mai
Chiang Rai
Hat Yai
Ubon Ratchathani
Udon Thani
Internationally:
Phnom Penh
Yangon (Burma)
Anywhere in Lao
Anywhere in PI
Thoughts on a postcard please....
Long Weekend Away From Pattaya....and not Rayong.

Udon Thani is about a 10 hour bus ride from Pattaya, OR a 1 hour flight from BKK. Looking at the bus timetable they actually run 10 buses a day from Udon to Pattaya. Probably explains why so many GG and LB's make the trip down to Pattaya for working.
When I was there in November a lot of the bars and clubs seemed to wind down about 1am.
I stayed at a place called Top Mansion, very well located for the nightlife areas, Air Con and only 380bt a night!
I wouldn't say it was a great hunting ground but they're definitely out there seeing so many hot LB's call it their home town. if you can sniff them out (luckily I had The Hound with me one night!). In some ways I found it more fun having to hunt then just having them chase you down Soi 6.
There isn't a lot to do and see tourist wise in Udon itself unless you head a bit further North to Nong Khai on the Laos border. There's a really cool Buddhist statue park place.
All those criticisms aside I consider it my "Northern Retreat" when a change of pace is needed.

Going by your criteria I would knock off Burma and Lao from your list. Purely from the drinking past 2am. Although theres always an indigenous venue around that stays open later than the often 12 am curfew. Same could be said for most of your Northern Thailand list. So your principally left with Cambodia or Pi. If ladyboys is a prime consideration, its really going to be have to be PI out of whats left. But you've made yourself a very self limiting list. Chuck it in the bin, decide where you fancy going and head on out without any pre-conceptions. I've been to the remotest corners of Thailand, malaysia, Lao, Myanmar, Vietnam, Cambodia and without exception theres always a party to be had. Its just combining all the elements of your list at the same time thats the problem. For a long weekend I'd probably head to Phnom Penh, found that place hilarious, but haven't been there for ten years now so can't give you anything current.
