As my time here is coming to an end, i would like to recreate some Thai food back home, in particular Thai Green curry.
Does anyone have an authentic recipe for this dish? or any others?

I think the problem you will have is that if you ask 5 different Thai chefs, you will get 5 different answers.
The other problem is that its near impossible to say, "5ml of this, that ", depending on the strength of the fish sauce, you need to balance it with a bit of sugar/lime juice, and every other ingredient that requires this balancing skill.
But you can certainly have a go and with learning what balances what food, you will get something that is very tasty (and LOADS cheaper than your local Farang take-away or restaurant!).

It would be a good idea to buy some green curry paste while you are in Thailand.
Any good supermarket in Thailand will have some.
The different kinds curry paste are most difficult to find back in Europe.
Then you need some coconut milk and fish sauce.
They can be found more easily in Europe.
These are the basic ingredients:
- 400 ml Coconut milk,
- 1 soup spoon of curry paste and
- 1 soup spoon of fish sauce
Cook them and add some meat and vegetables of your choice.
You might want to sweeten it slightly and add some spicy thai basil at the end.
If you want to cook some red or yellow curry it is basically the same.
Only with Massaman curry you need 2 soup spoons of curry paste.

Authentic green curry paste can be bought in Tesco, I have a thai shop near me which brings in all the ingredients from BKK once a week. I know the Thai chef in the local Thai resturant and for a while she used to come to my house once a week and teach me how to cook and with Green curry it is all about how long you cook the paste and the quantity of fish sauce, it can make a huge difference to the taste.
Tried out my new skills a few months ago and had a dinner party for a group of friends, one American guy that came is an amazing cook and he even said it was the best meal that had ever been cooked for him, so the boy done good.
All about practice and taste JCS, there is a great book called Authentic Thai cuisine and it is one that they have in the resturant so it must be decent.

The best Green Curry Paste is from Villa Market.
The paste is sold in see through small cellophane sachets - enough for 4 portions.
They also do Red Curry, Mussleman, Yellow, Panang.
Just add coconut milk and Meat/Vegetables.
