I will be taking my LB GF to Cha-am and/or Hua Hin for a few days later this month. Can you recommend any hotels and/or interesting things to do or see?

You should choose your hotel there on the location.
if u like to go in the city at the evening you should choose one that is closer to Hua Hin or directly in hua Hin like the Hilton.

Last time i stayed at the Anantara Resort, a great hotel 10 minutes otuside from hua Hin so we had to drive every time when we like to go out.

A perfect place would be the Sofitel Hotel, very nice and confortable.

I go to Hua Hin again the next time with my LT but i can not decide if I take the Anantara again or choose a Hotel more in the centre.

Oh i forget.

There is not so much u can do in Hua Hin, when u go sight seeing i think u can make nearly all in one day.
But u can book tours to river Kwai and places like this that are very intersting to see if u like.

And a very nice place to stay in the evening is the night market, here u can get great food and drinks for
a very small money.
And be aware of the tailors they are twice as pushy as in Pattaya, no i think more than twice :-)

Hope i could give u a bit of help.

I was in Cha-am a year or two ago and stayed at the Regent Park, a nice hotel with a great pool and nice rooms. I don't know if it is LB friendly though. Nothing to do in Cha-am except eat, drink and lie by the pool or on the beautiful beach but you will be hassled by vendors all day long on the beach.
I took a few trips into Hua Hin but there is a very small bar scene there. The night market is ok and a visit to the fish dock is interesting to see the many species of fish they land there. If you don't mind the smell!

Guys, thanks for the replies. We might not stay as long as I thought if we get bored. Laying (and walking) on the beach is something I like to do. But we will definitely look into some of the excursions.

I am not bothered by vendors or tailors. When I am in Pattaya and the tailors try to talk with me, I just answer them in Spanish (No hablo ingles), and then they leave me alone. I have yet to run into a tailor in Thailand who speaks Spanish.

Beami, the river Kwai tour isn't to the place where the famous bridge was built is it? I thought that was farther north. That would certainly interest me.

The river Kwai bridge is north of Bangkok. Better to do the tour from there, not Hua Hin.
