food courts in malls are your best bet for variety and value as most hotels shut their buffets between 10:30 and 11:00 am. a scant few will close at 11:30 or Noon. late buffet cuts into the lunch-by-the-pool trade.
the 2 KISS restaurants are not bad for breakfast, 1 @ the Dolphin Circle and 1 on second road, as was the old dutch (is that still there?) also the Foodland counter(s) are good, Pattaya Klang ad all over BKK. Took La Dee Cheap and Good are what they are called i believe. on beach road try Baywatch.
i did not know that anyone other than the Brits made breakfast. has the Universe shifted?

Quite a few Hotels have their breakfast Buffets running until 1300,if you get up later than that, either use the food carts on the side streets or go to any of the shopping malls...
PS: Breakfast buffet at the Hotel Diana is utter crap!!!!!
